Craving tiramisu but short on time? This syphon hack whips up a dreamy cream filling in minutes!
Required recipes
Chocolate marquise - It can be prepared one day in advance or on the same day.
Hazelnut praline - This is optional and can be prepared several days in advance.
Equipment
0.5L Syphon. I'm using ISI Gourmet Whip.
Tiramisu espuma
180g Mascarpone
45g Heavy cream
25g Powder sugar
1 Egg white
2 Egg yolks
20g Marsala (optional)
Blend all the ingredients together with a hand blender until smooth.
Pour the mixture into a 0.5L syphon. Screw on the head securely and load it with 2 CO₂ cartridges following your syphon's instructions.
Give the syphon a good shake for about 30 seconds and keep in the fridge while starting to assemble the tiramisu.
Assembly
Place a marquise disc on the bottom of a serving bowl.
Pour the hazelnut praline on top of the marquise. For a stronger flavour you can also pour some espresso coffee on the marquise.
Pipe the espuma on top of the marquise.
Sprinkle some cocoa powder on top.
